E160b Annato

The colors are orange to red color and derived from the seeds of the Achiote tree Bixa Orellana. Unlike other yellow colors, annatto was sensitive to low pH and mostly has two variations also known as Bixin or Norbixin. Since it is stable at low pH, and most confectionaries have the addition of citric acid, Annato could also be used in confectionery.
